Grilled Sandwiches, or "sammies," are the cozy way to eat in cool weather.   Brie + Caramelized Onions + Fig Jam = Exotic Bacon + Sharp Cheddar + Apple = New Classic Brie + Apple + Cranberry + Arugula = The Holiday Grilled Cheese = The Classic   The bumpier the bread the more interesting the bite! Get the interesting seed bread, multigrain bread or craggy country loaf with thick crust.   Don't let gluten stand in your way! There's great gluten free bread out there... we recently heard that The Original Bakery in Fauntleroy has great GF loaves! So do Vashon Island Baking Company and all the grocery stores.  Slice bread (or choose presliced loaves) as thick as your filling will be -- too thick and your filling gets lost, too thin and it doesn't make it to your mouth safely!  Bacon makes all sandwiches better. You know this, but frying bacon is messy, so bake your bacon! Line a rimmed sheet pan with foil for super fast cleanup, place slices out flat on pan, put in oven, turn on to 400º and cook until done, probably 20 minutes.   Plan ahead and you'll have instant sandwiches! Do what we do in the food truck so you don't have a long wait:  pre griddle your bread with butter or olive oil, grate a bunch of cheese, slice some apples, caramelize your onions.    Mis en place, people ,  and you'll have grilled sammies whenever you want. Or your kids will!     Use a lid to speed melting. And leave it alone to get brown. Not burned, just aggressively toasted for crunch and flavor.   Yum!
